Oatmeal Banana Chocolate Chip Bars

Cooking from scratch is essential to esentialism balance, sustainability. Oats, banana I like. Maybe this will be good without chocolate chips?

Preheat the oven to 350 degrees Fahrenheit. Line a 10 x 15-inch baking pan with parchment paper and lightly grease.

In a medium bowl, sift the flour, baking soda and salt.

In a large bowl, combine the coconut oil, brown sugar, eggs, vanilla extract and mashed banana. Stir in the flour mixture, followed by the oats and chocolate chips. Fold in chia seeds, if desired.

Pour the batter into a prepared pan and smooth it into an even layer. Bake for 22 minutes, or until a toothpick inserted into the center of the pan comes out clean.

Allow to cool completely before slicing into bars.
